Sliced Pork Sandwich with Peach-Chipotle Sauce

Sweet. Spicy. Smoky. Saucy. Stellar. This spectacular sandwich is made up of all the best "s" words. But the one that will matter the most to your family? Dinner is *served.*
Ingredients
- Aunt Millie’s Brioche Buns
- 3-4 lb. pork loin
- Aunt Millie’s Brioche Buns
- 2/3 c. of molasses
- 2 tbsp. Worcestershire sauce
- 2 tsp. garlic salt
- 2 tsp. liquid smoke
- Shredded cabbage or cole slaw mix
- Sliced onion
- Peach-Chipotle Sauce*
Directions
- In a 1 gallon zip-top bag (or marinating dish) mix molasses, Worcestershire sauce, garlic salt and liquid smoke.
- Once thoroughly mixed, add pork loin and knead to evenly coat the meat. Marinate at least 1 hour to overnight.
- Preheat oven to 350.
- Place pork loin and marinade in baking dish.
- Bake until digital thermometer reaches 145 degrees, approximately 1 hour.
- Remove pork and let rest for at least 10 minutes.
- While pork is resting, lightly toast buns.
- Cover bottom bun with Peach-Chipotle Sauce* followed by freshly shredded cabbage or Cole slaw mix.
- Place 3-4 thin slices of pork on top of cabbage.
- Top with warm sauce and serve. (Sliced onions, sweet & spicy pickles, Chipotle mustard and extra Peach-Chipotle Sauce also complement this recipe)
Peach-Chipotle Sauce *
Ingredients
1 c. favorite BBQ sauce
1 c. peach preserves
3 tbsp. chipotle mustard
1 tbsp. chipotle pepper sauce
Directions
Combine all ingredients in a small saucepan and bring to a simmer, stirring regularly.
Once well heated and preserves have melted, allow sauce to cool.
